So you’ve had an open container of Hellmans mayonnaise sitting in your refrigerator for a few months now.
You were going to use it when you realized that it had passed the expiration date on the label…
This leads us to the question: how long does Hellman’s mayonnaise last after opening? After doing the research, here’s what I uncovered…
Best Method: When refrigerated, store-bought mayonnaise, such as Hellmann’s, can keep for up to 2-3 months after it has been opened and is still of high quality.
After doing more investigation, I discovered additional facts that you should be aware of, so please continue reading…

How To Keep Mayonnaise Fresh
The storage rules for a jar of mayonnaise that has not been opened are almost identical to those for mustard. In other words, you should keep it at a cool temperature, in a dry environment, away from sources of heat.
A cabinet in the kitchen that is away from the oven is a common alternative, but the pantry is also a good option for this.
Unopened mayonnaise does not need to be refrigerated (unless the label specifies otherwise), although storing it in the refrigerator won’t harm either. Once the jar has been opened, it should be kept in the refrigerator firmly sealed while not in use. Finally, but certainly not least.
Always scoop mayonnaise using clean tools that have been used just for that particular mayonnaise. You run the danger of cross-contamination if you use the same tools that you use for other food preparations.
FYI: “double-dipping” may enable some hazardous germs to be transferred into your mayonnaise, which might cause it to go bad much sooner than you’d want.
So what did I buy in Florida to take back to Tucson? Tucson is the only place I have ever lived in the U.S. where I cannot find Hellman’s Mayonnaise. pic.twitter.com/IXuQOqaiUD

How Long Does Mayo Stay Good If It Is Not Refrigerated?
Mayonnaise is very perishable due to the fact that it contains egg yolk as one of the primary components…
If you don’t refrigerate a jar once it’s been opened, it will only last around 8 hours at room temperature. Consequently, if you happen to leave it out overnight, it will be useless to you the next day when you wake up.
|Mayonnaise (unopened):||Best by + 3 – 4 months|
|Mayonnaise (opened):||Best by + 2 months|
|Mayonnaise (homemade):||1 week|
HOW LONG DOES HOMEMADE MAYONNAISE LAST?
When stored in the refrigerator, homemade mayonnaise has a shelf life of up to a week at the most…
It is best to remove the egg yolk after this period has passed since there is an increased chance of the salmonella bacteria forming in the egg yolk.
Pasteurization of eggs is used by commercial producers to prevent this from happening, however, the eggs you buy at the grocery store may not have been pasteurized.

What Happens If You Eat Mayonnaise That Has Been Refrigerated Too Long?
If you’re experiencing some mild stomach problems, it’s possible that your store-bought mayonnaise has expired and nothing severe has happened.
However, if you are experiencing significant stomach discomfort, you should seek medical attention. Because the mayonnaise was created from scratch, there is a considerable danger of acquiring food illness from the unpasteurized egg yolk used in it.
After a week, it is possible that it may become a breeding environment for salmonella, and you should throw it.
What Can I Do With Mayonnaise That Has Expired?
Don’t throw away that jar of mayonnaise that has gone bad; there are still some things you can do with it…
Apply a little amount on a dry cloth and use it to polish your stainless steel appliances and cutlery until they are sparkling again! You may use part of it to fill the space between clattering hinges in your home and enjoy the quiet opening and shutting of doors and windows.
What is the shelf life of unopened mayonnaise?
A jar of mayonnaise that has not been opened will keep for 3-4 months after it has passed its best before date. The date is inscribed on the side of the mayonnaise container, which you can see here.
Just had the vegan hellman’s mayonnaise and it literally is the first one I’ve had that doesn’t taste like salad cream. pic.twitter.com/f2nmCw6f1W

When you opt to keep it in the pantry, the shelf life will be three to four months at most. If it is kept refrigerated and unopened for up to a year, it will last for up to that time.
Identifying the Signs That Mayonnaise Is Bad
There are a few signs that your mayonnaise has gone bad, at the very least…
|Here are the details:
If you see any of the symptoms listed above, throw out the mayonnaise. The same is true if you’re keeping it over an extended period of time, even though it seems to be in wonderful condition. It’s better to be safe than sorry.
1. Is the mayonnaise over its expiry date?
That includes MAYONNAISE COMMERCIALLY PACKAGED – UNOPENED, which is included in this category. An unopened package of mayonnaise will normally retain its optimum quality for around 3 to 4 months beyond the date printed on the packaging if it is properly preserved.
I have spent an insane amount of time over the past few days trying to track down Hellman’s mayonnaise for a very specific Ukrainian recipe I’m making for an RPCV potluck tonight.

2. How long does vegan mayonnaise last once it has been opened?
FYI: The shelf life of homemade vegan mayo is around 4-7 days since, although the oil, vinegar, and salt stay much longer, the milk does not.
3. Is it possible to become ill from eating lousy mayonnaise?
FACT: Bacteria, not mayonnaise, are the culprits in the case of food poisoning. Bacteria thrive on foods that contain protein and are stored at temperatures ranging from 40 to 140 degrees Fahrenheit. It is safe to consume mayonnaise that has been produced commercially.
So, class, what did we learn? Buying store-bought mayonnaise-like Hellmann’s and refrigerating it keeps it fresh for up to 2-3 months.
Also, the guidelines for storing an unopened container of mayonnaise are almost similar to those for mustard. That is, keep it cold, dry, and away from heat sources. A pantry or a cabinet away from the oven is a nice solution.
Unopened mayonnaise doesn’t need to be refrigerated (unless the label says otherwise), but it won’t hurt. Enjoy the rest of your day, always stay safe, and treat others with kindness and respect. Until next time!
